Arroz con pollo (rice and chicken Costa Rican Style):

Ingredients:
2 Tbsp Lizano
2 Cups Cooked Rice
2.5 lbs Cooked Chicken Breasts
1 Onion (diced)
1 tbsp Celery (diced)
4 tbsp olive oil
4 Bouillon Chicken Cubes
5 Cups of Water
1 red pepper (diced)
1 tsp garlic paste
1 tbsp parsley (diced)
1/2 tsp achiote (annato)

Preparation:
In a frying pan cook onion with 2 tbsp olive oil for 2 mins at medium heat.  Shred chicken and poor into pan.  Add garlic, 1 cup of water, salt, achiote, Lizano and bouillon chiken cubes.  Mix well.   Stir for 1 minute.  Add 2 tbsp of olive oil and cooked rice, red pepper, parsely, celery and 4 cups of water.  Stir well.  Cook at high heat for 10 mins.  Lower heat level to low for 10 mins.  Let sit for 5 mins.
